Wild Goose with Potato Dressing

2 4# geese
¾ c onion chopped
2 ½ # potatoes
2 T butter
1# Jimmy Dean Sausage
1 t sage
1 c celery, chopped

Peel, cook and mash the potatoes with a little milk and butter/margarine. Cook sausage until the red is gone and drain well. Cook celery and onions in butter, but do not brown. Add this and the sage along with the sausage to the mashed potatoes. Salt and pepper the birds inside and out, then fill with dressing. Baste with equal parts orange juice and brandy. Bake at 350ºF for 2 hours or until done. Put the lid on the roaster last 30 minutes. A hunter's delight!
