They are really easy to clean. Here is a link on cleaning them.
Lemon Pepper and a little oil, pan fried with no breading. Dip a bite in melted butter with a little garlic in it and chow. Kinda like frog legs with more bones. Ya have to strip the meat off of the bone with a fork unless you fillet them.
You can also wrap chunks in foil with a little olive oil, lemon slices and crushed black pepper, and throw it on the grill.
I personally cut them off well below the head and a ways above the tail.
