Elk Mincemeat
Makes: 20 pt

4 # lean chopped meat
2 # chopped beef suet
3 # brown sugar
2 c molasses
2 qt cider
4 # seeded raisins
3 # currants
½# citron, chopped
8 c peeled, sliced apples
1 qt brandy
1 T cinnamon
1 T mace
1 T powdered clove
1 t each nutmeg and allspice
2 t salt

Cook meat, suet, brown sugar, molasses, cider, raisins, currants and citron slowly, stirring occasionally, until sugar and citron melt. Add apples and cook until tender. Add remaining ingredients; heat to boiling. Pour into hot jars; seal and store.
