NOTE: I actually have made this. It's pretty darn close. However, it's kind of hard to get all the ingredients.

Old Bay Seasoning
Yields: ~ 1/3 c

1 T Celery Seed
1 T Whole Black Peppercorns
6 Bay Leaves
½ t Whole Cardamom
½ t Mustard Seed
4 Whole Cloves
1 t Sweet Hungarian Paprika
¼ t Mace

In a spice grinder or small food processor, combine all of the ingredients. Grind well and store in a small glass jar.

Toulouse Seasoning Mix
Yields:
From: The Court of Two Sisters Cookbook

1 T Salt
1 T white pepper
1 T black pepper
1 T onion powder
1 T Cayenne
1 T Paprika
1 T thyme

Mix together well and store in an airtight container.

Spicy Herb Seasoning
Yields: 30 servings, ~ ½ c

‘Keep this mixture in salt shakers to serve instead of salt. Excellent for a salt-free diet!!”

1 t cayenne pepper
2 T garlic powder
2 t dried basil
2 t ground savory
2 t onion powder
2 t dried sage
1 t grated lemon zest
2 t ground mace
2 t dried thyme
2 t dried parsley
2 t dried marjoram
2 t ground black pepper
1 t paprika

Crush or grind all the ingredients together. Let stand at least overnight before using. Keep this mixture in an airtight container.
