FINALLY so for the delay
the tuna kabobs were basted right before grilling so that the lemon in the sauce would not have a seviche effect on the meat.
measurement are approximate as i rarely use or write down recipes.
juice of 6 whole lemons and 2 limes
one buch of parsely chopped
dash of salt and black pepper
1/2 cup of olive oil
8 cloves of roasted garlic
blend well in a food processor or with a chopping wand, if you want to have a very thick sauce, add the olive oil slowly during the blend.
*roast garlic- using a fresh garlic bulb slice the top off exposing the cloves. drizzle with olive oil, wetting all of the cloves. roast in the oven at 3-350 degrees for 10-20 minutes. they are done when the clove tops are browned and some of the cloves should pushing up out of their peels.

venison marinate
juice of 6-8 whole limes
3 bunches cilantro chopped
3-4 garlic cloves (roasted garlic is a good substitute here)
3-6 serrano peppers (fit the heat to your taste hear, heat will get stronger the longer the marinate is stored)
salt and pepper to taste
1/4 cup of water
1/2 cup of olive oil
blend like above recipe( nuts can be added to vary the taste but the need to be finely ground to avoid charring on the grill)

these to recipes are very versatile and many items can be added or removed with great results. they can be watered down some to make a marinate for larger item like whole chickens or pork loin, just give them 4-8 hours to soak.

BEST STUFF EVER!!! Im tellin ya Kingdom. I went and layed on the rocks by the water like a 12" that just ate a jackrabbit. Great stuff. Thanks for sharing the recipe. Im gonna attempt the venison soon.

try watering it down and soaking a chicken overnight for beer can in the b-tt chicken.
