6 large morels (fresh or rehydrated)
3 c cooked rice (jasmine rice is good, but $$$$)
2 T + extra minced garlic
red bell peppers
-or- green bell peppers
4 green onions, chopped
1 # shrimp, fresh or frozen
salt and black pepper
Lightly saute the garlic, peppers (only for coloring), green onions, liberal amount of butter, and shrimp. Mix with the rice and stir well. Add cilantro. Stuff morels and put into shallow ceramic dish. pour melted butter and garlic onto stuffed morels. Arrange any leftover rice around the morels. Cover and bake at 350 degrees F for 20 - 30 minutes. Before serving pour on more butter and salt. Serve with fresh lime wedges to be squeezed right before eating.
NOTE: I haven't tried this one.
